We opened our Chippendale venue to 24 of Sydney's best baristas for a pre-competition training day. Latte art, espresso calibration, and a lot of very good coffee.

Twenty-four baristas. One day. A lot of very good coffee.

In January, we opened the Chippendale venue before dawn to host the Sydney Barista Championship warm-up — an unofficial pre-competition training day that has become a fixture in the city's coffee calendar.

The format is simple: baristas rotate through stations, working on the three disciplines that define the championship — espresso, milk texturing, and signature drink. They receive feedback from experienced judges and from each other. The atmosphere is competitive but generous; everyone wants to win, but everyone also wants the standard to rise.

Chambers has always been committed to the craft of barista work. Our training programme is among the most rigorous in Sydney, and we believe that the skills developed through competition make better baristas — and better coffee — for everyone.

The day produced some remarkable work. The latte art was extraordinary. The espresso calibration sessions revealed just how much precision matters at the competition level. And the signature drinks — the most creative discipline — showed what is possible when skilled baristas are given the freedom to experiment.

Three Chambers baristas went on to compete in the championship. We are proud of all of them.
