The kissaten — the traditional Japanese coffee shop — has existed since the early twentieth century. These were not places for a quick caffeine fix; they were spaces for contemplation, for conversation, for the appreciation of something prepared with care. The kissaten culture valued precision, ritual, and quality above all else.
The third wave of coffee — the global movement toward specialty, single-origin, and artisanal production — found fertile ground in Japan because the culture was already there. Tokyo's specialty coffee scene is now among the most sophisticated in the world. The baristas are technically exceptional. The customers are knowledgeable. The standard is high.
This is why Japan is our first global market.
